Hatchet Coffee provides local roasted coffee varieties, a long list of prepared coffee and espresso drinks, and an outdoor ethos and aesthetic rooted in the Boone outdoor culture.

This local favorite finds its roots in the High Country where founders Jeremy Bollman and Jeremy Parnell  first met while working as bakers. They were working for another Boone favorite, Stick Boy Bread Company, the best-known bakery in the High Country.

This is when Bollman and Parnell “realized their shared passion for quality coffee” during the late-night shifts at Stick Boy, and the idea for Hatchet Coffee first took shape.

They also have some of the best names for their seasonal drinks–such as Smoke and Mirrors, a “tongmuguan smoked bohea tea, oat milk, pure maple syrup, roasted vegan marshmallow.” Sounds like a winter delight.

They have consciously built the company around an ethos of outdoor life and the Boone outdoor sports culture. In fact, in their early days their operation was situated inside Center 45, the local climbing gym. And they’ve actually not moved too far away. They’re just a few footsteps away from the gym’s front door. It’s a climber’s and coffee drinker’s dream. Enjoy!
